Master These 6 Easy Recipes Before Moving into the Dorms

If you are used to having a good home cooked meal on a regular basis, you are in for a real shock freshman year living in the dorms. While the cafeteria does offer some tasty, freshly made options, your typical meal will often consist of pizza and French fries. You can give yourself some variety and express your creativity through these meals to master before you move into the dorms. You don’t need to be a gourmet chef to create a yummy meal. All you really need is a mini fridge, a microwave and a clean surface to prepare your food.

Ramen

Ramen is the staple meal for college students everywhere. You can freshen up your ramen recipes by adding fresh herbs, spices and vegetables.

Ramen and Veggies

INGREDIENTS

2 (3-ounce) packets ramen noodles (discard the flavor packets)

2 cups broccoli florets

1 teaspoon soy sauce

1 cup shelled edamame

1/4 cup red bell pepper, seeds and membrane removed, cut into strips

2 green onions, ends trimmed, and cut into small pieces

DIRECTIONS

Add the broccoli to a bowl with 2 tablespoons water. Microwave for about 2 minutes. Drain and set aside.

Cook the noodles according to the package directions.

Add the broccoli, edamame, bell pepper, and green onions, and soy sauce to the bowl, and toss.

Drain the noodles then add them to the vegetable mixture. Toss to thoroughly coat. Serve warm.

Mug Mac N’ Cheese

Nothing says childhood like macaroni and cheese! Mug meals are delicious, fast and easy. Pack your favorite ingredients into a mug and stick it in the microwave.

1/3 cup small macaroni elbow noodles (uncooked)

a scant 1/2 cup water

a scant 1/4 cup milk

1/2 cup pre-packaged finely shredded cheese (we like a cheddar/jack blend)

DIRECTIONS

Put the macaroni and the water into a mug. Microwave on full power for 2 minutes. Stir. (Note: the water will boil over just a bit, that is fine)

Microwave for another minute. Stir.

Microwave for a fourth minute, and then check to see that all the water has been absorbed. If not, microwave a bit more, until it is gone.

Stir in the milk and shredded cheese and microwave for a final 30-60 seconds. Stir well, and enjoy.

Grilled Cheese

This is great if your dorm lets you have a panini press or waffle maker in your room. If not, all you need is an iron.

Grilled Cheese with Spinach and Avocado

2 Slices of any bread

Olive oil

1/2 Avocado, sliced

Fresh baby spinach

2 Slices cheese (your choice)

DIRECTIONS

Spread a thin layer of olive oil on one side of each slice of bread. Flip the slices over and place 1 slice of cheese to each piece of bread. Top with spinach and avocado. Fold together to make a sandwich. Cook 2-3 minutes on each side (less, if broiling).

Wraps

Wraps are a quick and healthy way to fill up on the go. If you have some salad, veggies, or even meat and cheese in your mini fridge you can easily wrap it up for a delicious meal.

DIRECTIONS

Add the lettuce, parmesan, tomato, avocado, and chicken to a large mixing bowl with the dressing and toss to fully coat. Add the filling to the wraps or tortillas, roll them up, and serve. You can press the wrap if you have the appliance to do so.

You can flavor oatmeal so many ways, and its healthy! Just add some fruit, granola, or yogurt! This is a great snack to have on those cold days in the fall.

Parfait

This is a simple healthy solution for breakfast or something quick if you want a sweet treat. Load up your yogurt with your favorite berries and granola.

Spoon 2 tablespoons of yogurt into the bottom of the glass and smooth. Spoon 2 tablespoons granola overtop and smooth. Spoon 2 tablespoons of fruit overtop and smooth. Add honey on top. Serve.
